It is called "akara" by the Yoruba people of south-western Nigeria and by the citizens of Sierra Leone, "kosai" by the Hausa people of Nigeria or "koose" in Ghana and is a popular breakfast dish, eaten with millet or corn pudding.

  1. Take 3 cups beans, scotch bonnet, 1 large onion, salt, ajino
  2. Take Moto, teaspoon curry, teaspoon mixed spices
  3. Prepare 2 red bell peppers, veg oil for frying

Akara - Black Eyed Peas Fritters. Akara, which is also known as black-eyed peas fritters or Acaraje, is a very delicious, deep-fried beans cake made from black-eyed peas paste. Steps to make Akara:
  1. In a bowl pour the beans and soak for 20mins with warm water. You can either use your hand to peel it or pound it in a mortar. Wash with enough water and strain after each step.
  2. Using a heavy duty blender blend the beans together with diced onions, pepper and red bell peppers. Once you've achieved a very smooth paste, transfer into a clean bowl.
  3. Using a wooden spoon stir to combine. Add the salt, ajino moto, mixed spices and curry. Beat with the wooden spoon for about 15mins. Heat oil in a pan and once hot start the frying process. Once the first side is brown flip to fry the other side. Once done drain in a paper towel to remove excess oil.
  4. Serve with your pap or anything of choice.
