- Warm some oil in a pan. Cut the Tofu into small cubes and fry in the oil until the outside turns golden brown. Add salt while in the oil.
- Cut the aubergine into small cubes and roughly chop the spinach. Finely chop the garlic.
- Add the garlic and aubergine into the pan with the tofu and fry until the aubergine starts to brown.
- Add the spinach and soy sauce and stir until the spinach has wilted.
- When the aubergine is cooked throughout, turn off the heat and serve on some rice. Garnish with toppings of your choice (I used chilli oil).
Cook the ingredients in the following order: onion, mushrooms, bak choy, frozen spinach. Add the tofu, then the spices with the soy sauce and sesame oil. Serve with a side of white rice, or rice noodles, or anything that you feel like. Prepare the tofu by gently squeezing out excess moisture by wrapping it in paper towels or a clean kitchen towel. Drain on kitchen paper and set aside.
