Unlike other khichdi recipes, this recipe uses a deep pan with the lid to get a sparse, uncompressed texture. In its traditional form, Khichdi consists of mung beans (moong dal) or lentils, cooked with rice (or buckwheat), vegetables and mild Indian spices and can vary greatly depending on the region. - Wash clean and finely chop all the veggies and keep aside. Wash and soak all daals and rice for minimum.20 minutes.

- Stir for 2 minutes than add finely diced potatoes, tomatoes and green chillies one by one. add salt and turmeric powder.Mix well.
- After 2-3 minutes add soaked dals and rice, stir for 2 minutes on high flame add spices and mix well. After 2 minutes add 2-3 glasses of water and let it pressure cook upto 3-4 whistles. Turn.off flame and let it rest for 5-7 minutes.
- Now open the cooker serve hot topped with desi ghee and curd.
