Heat the vegetable oil in a large saucepan over a medium heat. Add the sliced onions and sweat until golden brown, stirring occasionally. Add the ginger and garlic pastes to the pan. Carrot Veggie Puffs: One cup shredded carrots. one cup shredded zucchini.
Instructions to make Veggie puffs:
- Mix all puffs ingredients except water into a bowl, add water gradually while kneading, until the dough smooth and not sticky. Wrap the dough, keep into the fridge ±15 mins
- Sauté the minced garlic until fragrant, put on mushroom and carrot, stir fry ±2 mins, add pinch of salt & pepper, add on abit of water. Stir for a while, then add on the eggs, scramble until cooked.
- Divide the dough into 8 (you can divide it into more, if you wanted to make smaller size of puffs), flatten the dough into circle shape. While you doing this, you can start heating up the oil for frying the puffs later.
- Fill in the flattened doughs with the stir fried veggies ±3 tablespoons, seal the edge with white egg (spread it onto half of the circle), braid it (to make the edge sealed tighter).
- Deep fry until both side golden colored.
