Who says a sandwich has to be packed with cold cuts? This Mediterranean veggie sandwich features our garlic herb white bean dip, sliced red onion, shredded carrot, and feta cheese. Instructions to make Veggie Sandwich:
- Heat oil in a pan on medium low flame. Add chopped garlic. Sauté for few secs.
- Then add mushrooms and broccoli. Add salt and crushed black peppercorns. Mix well and cook them for a minute or two. Cover the lid.
- Now add sweet corns and Sprinkle some Oregano. Mix well. Now transfer this filling to another small bowl.
- Butter the both sides of bread slices and then fill the mixture, add the sauces, place it on one slice of bread, cover with another slice.
- Now in same pan, toast the sandwich from both sides.
- Your sandwich is ready. Enjoy!
To top it all off, we've used pea shoots for some visual flair; though you can use any type of sprouts or microgreens. It's super fast to put together and pretty darn delicious. Avocado and goat cheese provide a creamy complement to raw, crunchy vegetables. We loved the Moroccan aroma coming from the star anise, cinnamon and cloves.
