Instructions to make Bhindi gosht:
  1. Wash okara nicely with water. Completely dry them and remove stems
  2. Cut them into 2.5 to 3 inches pieces.
  3. Heat oil and sautay okara for 3-4 minutes. And take out in a plate. Keep a side
  4. In the remaining oil add sliced onions and sautay till golden brown
  5. Add meat, ginger garlic paste in it and sautay till color of meat become light golden
  6. Add salt, red chilli, coriander, turmeric powder and mix till oil seperated from masala.
  7. Now add water and let meat cook till soft.
  8. Than dried out water and mix meat till oil seperated again from masala
  9. At this stage add okara and slitted green chillies mix well.
  10. Add some water to make okara soften. Than Sprinkle whole spice powder on top. Mix and keep on simmer for 2-3 minutes
  11. Turn off flame and dish out. Enjoy with Naan or chapati

Having said that, let me also tell you, there are not many masalas that go into this mutton curry. As quickly as this gets cooked, it is pretty easy as well. The tang in this, one pot recipe, comes from the tamarind pulp and the heat from the fresh chilis and chili powder.
