  1. Take the ingredients required for the covering in a bowl. Mix them well, add water as required and knead a tight dough.
  2. To prepare the stuffing, take boiled and mashed potatoes in a bowl, add all the ingredients and mix well.
  3. Make small portions of the stuffing and keep it aside.
  4. Now take a medium sized ball of the dough and roll it out till it's thickness is equal to that of a puri. Place a portion of the stuffing in between (as shown below) and fold it to form a semicircle. Seal the edges properly. Prepare all the karanjis in the same manner and keep them aside.
  5. Heat oil in kadhai and add mustard seeds and cumin seeds. After they sputter, add the water, red chilli powder, turmeric powder and goda masala.
  6. After it comes to a boil, add the prepared karanjis and let it cook for around 15-20 min on medium flame. Stir it now and then. After it is done, switch off the flame and close the lid.
  7. After 5 minutes, serve it hot with ghee on top!
