Akara - Black Eyed Peas Fritters Akara, which is also known as black-eyed peas fritters or Acaraje, is a very delicious, deep-fried beans cake made from black-eyed peas paste.

To begin with this recipe, we must first prepare a few ingredients. You can have kosai(akara) using 6 ingredients and 9 steps. Here is how you cook it.

The ingredients needed to make Kosai(Akara):
  1. Take 5 cups beans
  2. Get 1 large onion
  3. Prepare 4 rodo(attaruhu)
  4. Prepare to taste Salt
  5. Get Seasoning
  6. Take Oil for frying

Add egg, ajino, salt to your own taste and mix well. Akara is a deep-fried fritter made from beans paste or beans powder. It is also called Kosai, Bean cake, Acaraje or Beanballs and is mostly made with black-eyed peas (beans) but there are many other types of beans you can use. Akara is a very popular breakfast dish in Nigeria.

Steps to make Kosai(Akara):
  1. Soak beans for 5mins and smash it inside a mortar and pestle to remove shafts.
  2. Pour beans into a large bowl and add enough water,squeeze and remove shaft/skin of the beans, until beans is clean.
  3. Wash and cut Onions,wash rodo and add into beans.
  4. Grind the beans with little water until a smooth paste is form(the paste should not be to thick nor watery).
  5. Add salt and seasoning to ur own taste,and mix well.
  6. Use a spoon to drop beans paste into hot oil,continue dropping until pan is full,observed a reddish brown colour at the bottom of the akara,and then turn the other side to allow it fry too
  7. When both side form a reddish brown colour then your akara is done,use a perforated metal spoon to park ur akara and pour into a colander,to allow excess oil drops.
  8. Serve hot with Kunu,tea or Akamu….Enjoy
