- Make ready 1 Leftover chicken (any amount)
- Prepare 3 medium potatoes
- Take 2 eggs
- Prepare 1 large onion, chopped
- Prepare 2 garlic cloves, chopped
- Take 2 bay leaves
- Prepare 2 tbsp olive oil, extra virgin
- Prepare 150 ml chicken stock
- Take 1 tbsp worcestershire sauce
- Make ready 1 tsp ground coriander or freshly chopped coriander

- Prepare as needed boiling water, to add to the pan.
- Make ready 100 ml dry white wine
- Take 1 can chopped tomatoes
- Get Optional: hot or smoked paprika (to taste)

Instructions to make Leftover Chicken Stew:
- De-bone the chicken and set aside.
- Peel and cut in half the potatoes.
- Bring to the boil the potatoes and eggs. Cook for about 12-15 minutes or until cooked.
- In the meantime start preparing the onion and garlic.
- Once cooked drain the potatoes and eggs from water. Place the eggs in cold water.
- Using a saucepan or wok add the olive oil and heat up over a medium heat.
- Once hot enough add the onions, garlic and bay leaves fry until softened. About 3-4 minutes.
- Add in the tomatoes, stir and simmer for about 5 minutes.
- Add in the stock simmer for about 5 minutes
- Add in the chicken, wine Worcestershire sauce, salt, if adding paprika, coriander (I used powder as I didn't have freash coriander and didn't fancy a trip to the shops but freshly chopped coriander will give it a much better flavour.)
- Add water depending on your preference of how much sauce you want with the chicken. Simmer for 5 minutes.
- Remove the shell from the eggs, cut into chunks and add into the chicken. Simmer for 2-3 minutes.
- Check seasoning is to your taste before adding in the potatoes.
- Add in the potatoes, cook for a few minutes so that the potatoes absorb the liquid.
- Remove from stove when done.
- You can serve it over rice instead of serving it with potatoes.
