Heat a large saucepan with the oil, add in the diced beef and cook quickly until it is browned all over. Retain the high heat and then add in the diced onion, garlic, carrot and red pepper and cook these with the beef for a further minute or two. Put all ingredients, except canned beans, cornflour, coriander and soured cream, into a large, flameproof, ovenproof casserole and stir to mix. One of the ingredients I refer to is Goulash Creme - a wonderful combination of onions, tomatoes, cumin and spices.
Steps to make Store cupboard goulash:
- Sauté carrots celery and onions in some oil. Add meat and brown. Add paprika and stir well
- Add tomatoes and stock. Season to taste. I decided to throw some more onions in at this stage! Now turn down the heat to low and simmer for about 2 hours, add more stock as needed
- Add some marjoram and serve with more sliced onion and crusty bread 😀
