Add the chicken and brown them all over. Season the chicken with salt and pepper, then add the lemon juice, mushrooms and stock. Remove the cover and continue to roast until golden brown. Transfer browned chicken to casserole dish and top with mushrooms and onions.

- Cook onion and garlic in olive oil until soft. Add ground ginger and mix well. Add red pepper. Cook until soft
- Add diced chicken and cook until brown on all sides
- Meanwhile mix chicken stock,soup and lemon juice and stir until smooth.
- Add sauce mix to pan and stir well. Bring to the boil until slightly reduced. Simmer for 10 -15 minutes to make sure chicken thoroughly cooked; add spinach and mix in for the last 5 minutes
- I served with rice
Remove the cover and continue to roast until golden brown. Transfer browned chicken to casserole dish and top with mushrooms and onions. Heat oil in a skillet and stir fry the chicken adding the garlic, paprika until cooked. Pour the sauce and mushrooms over the chicken and garnish with chopped parsley. Store any leftovers, covered, in the refrigerator.
