- Make ready 1 aubergine
- Get 1/4 cup greens of spring onion/ half red onion

- Get 1/3 cup yogurt / Greek yogurt
- Make ready 2-3 tbsp coriander leaves 🍃, finely chopped
- Make ready 1/2 tsp cumin powder
- Make ready 2 tbsp Pomegranate arils/ grapes chopped
- Get 1 tbsp dried raisins (optional)
- Get 1 tsp sugar (optional)
The knife should slide easily in aubergines without any resistance. You can also do this dhungar technique of infusing charcoal smoky flavor in the baingan. This is an optional step. use natural charcoal for this method. The skin of the eggplant will look wrinkled and may turn slightly pale and brown as it gets roasted.
Instructions to make Bharat (Roasted Aubergine):
- Make some slits on the aubergine and roast it on the gas uniformly.
- Once done, let it cool down for 10-15 mins and then remove the skin completely.
- In a bowl, take the yogurt and whisk it to smooth. Chop/mash the aubergine in small cubes.
- Mix all the ingredients together and adjust sugar as required. Enjoy as a dip / side dish.

I'm a massive baingan bharta snob because there is nothing appetizing about pulpy eggplant or baingan. Bharta can either be slimy boring or it can be smoky amazing and I vote for you-know-what!
