- Get 1/2 inch ginger

Instructions to make Veg dhansak:
- Keep all ingredients ready. Wash and soak all 3 Dals for minimum 30 mins. Chop potato and pumpkin into small pieces and put it in water.
- Take a pressure cooker. Add dal, add chopped potato and pumpkin vegetable. Add kasuri methi. If you have fresh Methi you can add. Add pinch turmeric and little salt. Pressure cook it till Dals and vegetable cooked properly.
- For green paste -Clean Pudina and kothmir. Take a mixer jar, add Pudina, kothmir, green chilli, ginger, tomato, garlic and salt. Don't add water. Crush it to paste. Separately puree the onion.
- Heat oil in a pan. Add bay leaves, clove, hing and jeera. Then add onion puree saute till oil releases. Add green gravy. Mix well. Cook till oil separates. Now add pressure cooked lentils and vegetable. Add red chilli powder, haldi, coriander cumin powder. Mix well. Allow it to boil.
- Allow the gravy to cook. Add garam masala. Cook till the gravy color changed. And oil separated.
- Veg dhansak is ready to serve. You can serve with roti/ rice.
