Tahiri can either be made with vegetables or meat. This recipe of veg Tehri uses the blend of vegetables like cauliflower, potatoes, carrots, and peas. Potatoes and Cauliflower alone can make any dish desirable. Tehri was originally concocted by kings in northern India as a vegetarian equivalent to the Mughals' mutton or chicken biryani.
Instructions to make Veg Tehri:
- Take a pressure cook, put 3 tbsp of ghee in it. Add cumin, green chillies, bay leaf in it.
- When they turn brown, add ginger garlic paste and then after 1 min add chopped onions
- Once the onion turn pink, add chopped tomatoes to it. Let it cook for 3-4 mins. Now add rest potatoes, green peas and cauliflower
- Now add turmeric, red chillies, salt and garam masala. Let it cook with veggies for sometime. Meanwhile, take 1 cup rice and wash it properly.
- Now add the washed rice to the cooker. Mix veggies, masala and rice together.
- Now cover the pressure cooker with the cover. Let the whistle come 2 times.
- Once two whistle is blown, you can leave it for 10 mins and then open the pressure cooker.
- Serve
